Soup warms the soul on cold winter days (or nights), and it's a quick, easy meal. White Bean Chicken Chili is by far my favorite winter dish. The following recipe calls for ground turkey, which I'm sure is just as good. Bon appetite!
1 and 1/4 pound ground turkey
1 cup chopped red onion
1/3 cup poblano pepper seeded and shopped
2 garlic gloves minced
1 tablespoon chili powder
2 tablespoons tomato paste
2 teaspoons dried oregano
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1 19 ounce can cannelini beans rinsed and drained
1 14 ounce can fat free less sodium chicken broth
Combine ground turkey, onion pepper and garlic and cook in skillet until turkey is done. Stir in all the remaining ingredients and bring to a boil. Reduce heat and simmer for 10 minutes.
Stir in 1/2 cup chopped fresh cilantro. Garnish with lime wedges.
